[Re-branded] Molecula, Surabaya

Get bored of the usual cafe fares in Surabaya? Then you should visit Molecula, a cafe that serves molecular gastronomy. If you have not heard of molecular gastronomy before, it is a kind of food science that incorporates physical and chemical transformations of ingredients in the cooking. As far as I know, Molecula is the first cafe serving this kind of food in Surabaya (cmiiw).




The interior looks clean, bright and Instagram-worthy. It was empty when we came on a Saturday morning so we could take as many pictures as we like haha.

Iced Lemon Tea - IDR18,000
It was too sour for my liking.

Iced Salted Caramel Latte - IDR33,000
The salted caramel taste was there without overpowering the coffee.

Curry Fried Rice + Chicken - IDR40,000
The fried rice is served with chicken katsu and crumbs that is usually found in ayam kremes lol. The chicken was a bit under-seasoned. Meanwhile, the fried rice came in big portion and it tasted flavorful with bold curry seasoning. 


Aglio Olio - IDR40,000
The pasta was supposed to be served with tuna, but my cousin requested the staff to change the tuna to mushroom. The pasta was served with well-done sunny side up, which was strange (first time seeing aglio olio with fried egg). The so-called mild spicy pasta was too spicy for me! The pasta was al dente and the mushroom blended well with the seasoning, resulting in the right earthy taste.


Cold Lava - IDR40,000
If you think 'Cold Lava' is something related to molten cake, you are wrong. What came to my table was a plate of chocolate brownie with vanilla ice cream sitting on top of it, garnished by peanut butter crumbs and a slice of orange. To complement the dish, Ovomaltine chocolate sauce is served separately to pour to the brownie. The Ovomaltine sauce was da bomb! Try mixing it with peanut butter crumbs and you will get a match-made in heaven.


Fruity Pasta - IDR42,000
To be honest I dunno how to describe this dish because I forgot to note the description from the menu book (I couldn't find the menu online either). My best description would be 'colorful pasta made from konnyaku jelly, served with vanilla ice cream, sliced fruits and fruity jam'. When the staff lifted up the tall glass covering the ice cream, the smoke burst out. The 'pasta' was somehow tasteless to me, but I love the block of konnyaku under the 'pasta'.

Overall, I feel that the savory food does not stand out but you definitely should order their dessert because it is their strength. The quality and creativity do justify the price tag. The ambiance was great and it boosted your mood while enjoying the beautifully-presented dessert.
